I graduated from the Institute of Optimum Nutrition and hold a BSc in Health Studies from the University of Greenwich which allows me to critically research, analyze and evaluate health-related issues from a multi-disciplinary perspective
I was propelled into the world of nutrition when I became strongly aware of a gap in the nutritional information being delivered to adults and to children.
Having a teenager of my own I have learnt through him about the content of his home economic classes and the general nutrition advice being taught. Whilst it can be a conflicting and controversial field, it is important that the right information is provided to help build a strong foundation for health.
Our future generation is being plagued by health issues at too young an age.
There is a universal need to support the general public and children in helping them to gain an understanding of the impact of food within the body; how poor nutrition may be a contributor to poor health (weakened immunity, decreased energy, digestive and skin complaints), alterations in mood and weight issues.
Previously, I worked in the corporate world and had done so since my teenage days. No longer happy in my chosen career and working within a field that was providing me with no personal satisfaction. I had to take control of my own destiny and do something that was going to fulfil me and allow me to help others whilst bringing personal satisfaction.
Previously, I was diagnosed with celiac disease in 2006, it was a big shock for me as I was that woman that disliked fruit and vegetables. I enjoyed a few pints with friends on a weekend and consumed a fairly beige diet.
Being diagnosed with celiac disease was the best thing that could have happened to me.
Changing my diet to gluten free, helped me to get acquainted with fruit and vegetables I had ignored for so long in the produce aisle. Nuts, seeds and fish became staples in my diet and I soon started to notice and feel the impact on my body of eating well.
I felt alive, energized, that veil of fatigue that had plagued me for so long, lifted.
Being an avid cook since, 13 years of age, I now have the ability and knowledge to put together fun, nutritious and delicious recipes that will take on the challenge of converting everyday foods into nutrient dense, packed with flavour, too irresistible not to eat, kid friendly and kid approved substitutions for meals and snacks that not just YOU but your whole FAMILY will enjoy.
