Moroccan Cauliflower Rice with Garlic/Tomato Lamb

• 1/2 large head of cauliflower
• 2 lamb chops
• garlic/tomato seasoning
• pomegranate seeds
• Greek yoghurt
• Moroccan seasoning
Place cauliflower florets into a food processor and blitz to form rice. Drizzle with olive oil and a dash of Moroccan seasoning. Mix well and place in the oven for 30 mins.
Heat a pan over low/medium heat. Add oil. Season lamb chops with garlic/tomato seasoning and cook lamb for 6 mins either side and then allow to rest for 10.
Remove cooked cauliflower rice from the oven and cook a serving in a pan to provide crunch. Add in 2 tablespoons of sultanas and serve.
Place down rice, top with lamb and garnish with a dollop of yoghurt, sprinkle of pomegranate seeds.
