Pea and Scallion Soup
Prep 10mins ∙ Cook 15mins ∙ Makes 3
• 3 cups of water
• 1 clove of garlic
• 3 scallions
• Pinch of salt
• 3 cups of frozen peas
• 1/4 cup single cream
• 1/2 vegetable stock pot
• Pepper to taste
Place water, scallions, salt and garlic in a pot and bring to a slow boil. This will allow the flavors to permeate into your water.
When water starts to boil, add peas and cook for 10 minutes.
Add cooked ingredients to your blender along with cream and pepper to taste.
Serve immediately or return to the pot to reheat later.
