Smoked Salmon and Asparagus Tray

• 8 new potatoes, quartered
• 1 vine of cherry tomatoes
• 1 bunch of asparagus
• 1 lemon
• 2 smoked salmon fillets
Preheat the oven to 180 degrees.
Place the potatoes in a pot of boiling water for 10 minutes.
Place cherry tomatoes, asparagus and salmon in a baking tray along with the cooked potatoes. Season with salt, pepper and a drizzle of oil.
Bake for 30 mins.
When ready to serve, squeeze over the juice of a fresh lemon with a sprinkle of lemon zest on the fish.
